On December 24th, towering wooden structures are set ablaze along the Mississippi River. This guides the way for jolly Papa Noël through the bayou country. Rooted in Cajun tradition and Louisiana folklore, the levees are lined with over 100 bonfires, some even shaped like alligators, steamboats, or fleur-de-lis. Families gather with gumbo and fireworks to honor this centuries-old celebration.
