This old-watermen tradition features eight to ten paper-thin layers of yellow cake sealed with cooked fudgy icing. The style grew on boat-only Smith Island where locals baked the layers one at a time on simple stoves and wood-fired ovens. It’s a community cake made for work out on the water, church suppers, weddings, and big shared slices.
